Lent is only a few days away, so if you are giving up chocolate (or not) I have a great recipe for cocoa lovers to get their fix!
I live in farm country where eggs are normally plentiful and cheap, but I nearly fell over at the grocery store the other day when a dozen eggs were priced at $6.50! Then, thankfully, I remembered Aunt Nellie’s recipe, and it is THE best chocolate cake, so moist and dark, with no eggs needed! So, I thought I’d share this non-political, non-theological and probably not-so-secret recipe.
Sift 2 Cups of flour
1 ¼ Cup sugar
3 Tablespoons cocoa
2 Teaspoons Baking Soda
Add:
1 Cup Miracle Whip (or Mayo)
1 Cup boiling water
1 Teaspoon vanilla
Spread mixture in lightly greased and floured 9x9 pan
Bake at 350 for 35ish minutes (stick a toothpick in to see if it is ready)
